ROASTED BEETROOT & POTATO SOUP

Disclaimer: I have never been a huge fan of beetroot. I LOVE vegetables but beetroot was always a bit too ‘earthy’ for me if you know what I mean! This soup has COMPLETELY changed my mind. If you haven’t tried a cauliflower crust I hope this recipe blows your mind like it did mine! I have always loved pizza but when I switched to a cauliflower crust it was a game changer. It tastes so good and the crunch is just right. I think it also just feels good knowing that we’re eating cauliflower instead of bread, especially for the kids getting extra vegetables.

Avocado toast is so simple yet so easy to get wrong for some reason! In NZ everywhere we went for brunch had the most epic and loaded avocado toast and I was spoiled thats for sure! OVERNIGHT OATS RECIPE

This is one of my favourite life hacks!! It is so simple to make, fills you up for so long! I also don’t know about your children (if you have kids that is!) but mine open their eyes and literally expect food to be ready for them within seconds!!
